how hot should my engine get

hi i have a yamaha 15hp twin aux. age unknown cdi ignition
looks in very good condition. starts and runs great but let it run for 5 mins it gets hot, new impela and housing yet no water out of tell tale , how long should it take to open thermostat,how hot to the touch dose a block get can any body give me a clue thanks for your help hendo

I guess Second Degree Burns would mean it's overheating
