I think there's not a wrong or a right way of doing it, just different ways. I'll go over the pros and cons as I see them...
Quarter sawn wood - Great in theory, all in one piece. Hard to get and freakin expensive. Warps, (so would lose all it's strength) going by a boat I saw the other day.
Ply - Easy to get and cheap, easy to work with. Can be any length with staggered joins. Some say not to use it, half the grain runs the wrong way, but at worst it'll act as a former like foam.
Foam - Used by most these days, not cheap, engine bearers need to be wood really (if inboard), light weight, easy to shape, not that easy to get compared to ply. All of the strength is in the glass covering it though, so you're complexes (mat, woven, mat) have to be spot on.
Several people who's opinion I'd really trust have told me totally different ways and opinions.
