I have Hydrive steering which is pretty good although the fittings for the ram are not very well thought out.
Gauges are mostly a question of style.
Trims tabs? Get it together and play with it 1st.
Cyco makes shifters that are good enough or you can splash out on a Salmon one.
Fuel system is easy, just need a priming bulb and a water seperator.
I hear sterlings seats are a little tight for us fat blokes. The ones I had from chaos are the same seat only have more arse space! Gav can make the seat mouldings and chaos can tell you where to have them trimmed.
As your a chippie you wont have any problems making yourself side panels and a rear seat, just need to have someone trim them.
I am having two bucket seats in the back of my boat. This is not a style choice at all I just want the unlucky people in the back to have a good time too.

1, obviously mayfair/latham side mount would be the first choice, but normal hydraulic steering i would go seastar pro IMO
2, as rob said, personal choice depending on how much cash you wanna splash!
3, dunno!
4, i do a grp moulding to accept most types of shifter for £45
5, primer bulb & water seperator
6, i can supply seats(similar to phantom Evo's) & all upholstery.

We can get very good prices on SeaStar - but we have also started stocking the LS side mounted system.
This is a twin ram system and is excellent for high performance use. Prices are very good compared to say Mayfair / Latham etc.
Shown as fitted to an Evinrude.
