I was wondering whether larger motors, or more volts might be the way to go.

dunno, and dunno how the rc receiver/motor controller would feel about more voltz! (one battery does all on the boat)
bigger motors I reckon, assuming the controller can take the extra current draw.
a replacement battery (7.2v 1800mah) is 40 bucks! cheaper to buy anuvver bote!
surprising how lively it is! fair old kick when you give it one.
