Unhappy Mercruiser 5.0L oil pressure switch

gone through 3 oil pressure switches! fed up engine cutting out, any ideas?
Is something else causing this fault? Oil level is ok.

Do you've an oil cooler on your engine model?
Does the problem occur only when engine is at temperature?
What's your oil temp when the problem occur and rpm?
What's the oil pressure cold and then when engine is at temp?
Are you sure of oil quality?
Is it possible for you to check oil viscosity and compare it vs new oil?

Oil switch

The issue has happened when the engine has been cold and at normal operating temp. The oil is genuine mercury oil supplied and serviced by a mercruiser mechanic and is not overfilled.

if the oil pressure is above the manufacturer specification and above the oil pressure switch, the problem is
a defective oil pressure switch
a defective oil pressure connection
a defective cable harness
a defective ECU
an oil pressure installed at the wrong location
a fitting installed between the oil switch and engine block with a diam restriction (this cause a pressure loss information to the oil switch)
a wrong pressure switch reference, with oil setting out of engine spec.

if the oil pressure is under the manufacturer oil pressure spec and appear warm or cold engine
the problem could be
defective oil pump
defective oil pump valve
journal bearings worn out (check oil filter by opening it to find metal particles)
broken internal engine oil conduit
