Painting Over gel coat?
Whats best procedure?
So far flatted back with 320, but looks like it needs a bit more as there is still some shiney spots. 120?
Then was looking at primer and awlgrip gloss white.

Hi. I paint Cars for a living and I have loads of experience painting over Gell coat as I paint Hill Climb Race Cars in my own time.
2k solid will go straight over 320 providing it's been DA sanded.
You will need to prime if you use 120.

It all depends what finish you're after and who's painting it! If you're going to have a go yourself and haven't really painted much save your money and buy the cheap stuff. If it's a good finish that will last and hold up against the rubs and bumps a boat gets and an experienced painter is going to apply you'll be hard pushed to beat awlgrip.
Prep with 120 for primer or sand straight gel / primer with 400 DA.
You will get a much better finish with awlgrip with primer. The primer will barrier any crap on the gel like polish/ wax etc, awlgrip doesn't need much encouragement to fisheye.
Another good option is internationals perfection range. Poor man's awlgrip..

Its for my own boat Crusader 16, to be honest I may have a go as I have painted old track cars and bits before. It was the fact that a pro offered to do it in awlgrip for not a lot.
on above advice I may go over again with 320 and a DA and go auto 2k white. it doesn't have to be a great finish plus would be good to do it, 1 experience and 2 if its good I can take the credit haha.

a good one is to wet flat the 2k white with 800 and lacquer over the lot. really looks good and stays shiny for years.
