Thought I'd update this if anyone is interested!
Got the chinewalking issue under control, ended up lifting the motor slightly, running a 26p Trophy and added a bit of weight down low in the hull. I got some 2" lay flat hose, filled a couple of 2.5m lengths with sand and laid them either side of the centre stringer in front of the footrests. That together with a couple of pieces of car inner tube also filled with sand has sorted the centre of gravity nicely.
The boat is still lively, but it's predictable and drivable! Replaced the tilt tube bushes with bronze which has also tightened up the handling. With my Mayfair steering, modified mounts and now the bronze bushes the motor is pretty much solid, steering response and feel is awesome compared to the stock mounts and seastar on my Ring!
Had 74mph at only 5550 rpm in the calm, I'd guess the 26p Trophy is actually closer to 28. 5550 is right in the engine's sweet spot but I'd still like to have an extra 500 revs so I'm going to fiddle with the prop over the winter.
Unfortunately only managed 2 laps in the last race of the series thanks to another leaking fuel tank starving the motor. Looking into alternatives at the moment!
The best pic from a short race!

You gonna run the graphics over the rub strip? I rekon that'd look awesome! It looked sweet while you were out there!

Lovely looking boat!
Here is a link to my boat if you are interested, which shows the graphics running over the rubbing strip........Took ages, but was definitely worth it.
Only down side is you need to use fenders and be very protective when mooring up against other boats or pontoons!!!!
Did the rear fin work in the end? A clever design if it did.

That's my favourite ever Phantom! Not gonna lie, it's the reason that both of my boats have had oversized graphics Stunning boat
I'm not sure how well the vinyl would stick to my rub strip as it's all rubber, I'll get some scraps of Vinyl and have a go though! I don't have any cleats or way of mounting fenders at all at the moment so that's something else I need to think about!
I haven't ran it with the wing yet, so I don't know what difference if any it will make. It weighs absolutely bugger all! If it doesn't cost us any speed I'll be using it next season for sure, it looks amazing haha
