isn't that a trim tab to help flatten the wake for skiers and get the effect of a longer running surface though?

I'm pretty sure it is, never been lucky enough to tow behind one but most likely, all I do know is that are like bulldozers in the canals an the wash from one at a turn in the european cup finals gave my driver and observer a nice shower!

Now I see why you are asking about fins, very good idea with jet drives,
If your 27 hooks the fins might stop you spinning out, quite a few jet ski racers add bigger fins for sharper turning.

You could put skegboxes in like on a surfboard then you can try all sorts of shapes and size fins .
