Sounds like the engine needs offsetting to counteract engine torque.....check if the engine is off centre on the transom to the right looking from rear.....had this problem on a cabin cruiser with a 60 outboard.....moved the engine to the right about 1" ...after that it was fine

trim the engine level and look from the bottom of the transom to see how much lower the centre of the prop is below the boat. sometimes if its really low this will cause the boat to lean over onto drivers side.
also when asking about trim position. if the engine was trimmed right in against the transom this can also cause the same thing to occur
so did you trim the engine out when running?

you may not have to as only way would be to un bolt it from the transom and move it

if you haven't got a trim guage then i'd trim it level (prop at same angle as bottom of hull) whilst sat on trailer and sit in drivers seat, turn and look at cowl, pick a point that you can see then when you are out in sea you can judge where the trim is.
