Dont know about the Mercury 2.5 but the 7.4 fuel specs are on http://www.fourwinns.com then customer services and past specs they have fuel burn figures for their past boats in ltrs and US Gallons.

I run the Mercruiser 7.4 Bravo 3 in a 1997 Chaparral 260 and their figures look about right. When I purchased this boat I was a bit afraid of the burn rate of the motor but it hasn't ruined me, on a calm day 3000 rpm is 26 knots and it holds plane down to 17 knots with 3 up and gear. The 7.4 does give effortless power I think the torque is 434 lbft. Few pumps of the throttle and it fires up and idles nice. It is though quite a heavy motor. Hope this helps.

If your talking on a similar sized boat, with similar weight, it probably wouldn't be much different.
