SCS Transmissions are the best to use with turbines as long as you use a disk brake to stop the free power turbine while shifting.

Still working on my turbine project but spare time is hindering...

Gearbox first that will give you more options on props as you wont need as much pitch, like you say this will help reduce the torque steer.

Boat seems to have very little bow lift, from the videos there seems to be a lot of wetted surface. Speed looks low for the style of boat no rooster tail familiar with surface drives.
