Should Sail give way to Ski-boat?

Does this mean a vessel under sail should give way to a sportsboat towing a waterskier?

We had this very situation in the Sound a couple of days ago (I gave way; as I always do to anything when I am towing a skier. The possible consequences of 'pushing the point' being too 'final' to risk + maybe I should give way?)

You're not really restricted maneoverability though are you - you can still turn left and right pretty quick, stop, reverse etc. "Restricted maneoverability" IMHO is for vessels that would be unable to turn away from a collision course themselves. This could include dredgers, vessels restricted by draught, large ships, fishing trawlers, etc.

The one that does occasionally amuse me though is yachts that are motor sailing - they then don't have right of way any more but think (hope?) no one notices they're motoring under power with the sails up. Been guilty of that myself on occasion
