thanks for all the info on lift guys its been great! But the question I was wondering about was that of set back.
What is the porpose of setting the engine back from the transom?

It shifts the cente of gravity of the boat back, thereby to run flat out in calm water (ie when you would normally be trimmed right tight hanging it on its heal), you need less positive trim to bring the bow up, so more of the engine power is directed straight ahead, giving you a bit more speed.

The downside is the further aft the CofG is, the less stable the boat will be, it'll could be more prone to porpoising and chinewalking, and definately be more of a handful in the rough. The bow will tend to rise and fall with the waves more easily (as opposed to cutting through) and when the boat is airborne, it'll have more of a tendency to land arse first.

Plus, is you also start jacking the motor up on a bracket, the overall centre of gravity rises as well, which also reduces stability.

I think Matt's description is pretty good, I would add however, that when you wanna go really fast, getting the bows up, and thus reducing wetted area and associated friction is quite difficult, as the centre of lift moves farther aft as your speed increases.
So, as your speed increases, more and more positive trim (up) is required to maintain this 'bow up' attitude, and at some point, your trim setting simply won't get the bow up & the boat 'unstuck'.

In this situation, moving the motor aft on a bracket (set back) will both move the C of G back, which will help, but also increase the leverage that the motor has over the boat from a 'trimming up' perspective, so you'll go quicker.

More of a 'scream n fly' lake boat thing than offshore really, and all a bit 'Gucci' for me.

This is of course, all just my humble opinion, so could be utter bollix.

Good point. Until you're going REALLY REALLY fast and there's enough aerodynamic lift off the bow and ya have to start trimming in again to avoid blowing over.
